BBQ Season is Coming!

That's right! Time to start firing up the barbecues and getting into the warmer weather! I love this time of year, when it stay light later and the days are warming up. Of course, here in Colorado it can also mean storms when you least expect them, but you can always fire up the grill to have a fun time.

I'm sharing a great recipe our family loves for BBQs. This is a tasty side dish that accompanies pork and chicken really well.  It replaces potatoes, rice and bread, and is a little different than most side dishes. I think if you try it you'll like it too!

CORN PUDDING

1 can whole kernel corn, undrained
1 can cream style corn
1 box Jiffy cornbread mix
2 sticks butter
2 eggs, beaten
1 c. sour cream

Melt butter. Combine with beaten eggs, corns and cornbread mix; add sour cream and blend until mixed. Pour into ungreased 13 x 9 inch dish. Bake at 375 degrees for 1 hour or until golden on top.

Can be made ahead; covered and refrigerated. Remove from refrigerator and bake as above.
